Lemon Poppy Seed Muffins
2/3 c sugar
Grated zest and juice of one lemon
2 c flour
2 t baking powder
1/4 t baking soda
1/4 salt
3/4 c sour cream
2 eggs
1 t vanilla extract
1 stick unsalted butter, melted and cooled
2 T poppy seeds
1. Rub lemon zest into sugar until well blended. Whisk in flour, baking powder, baking soda, and salt.
2. In separate bowl, mix together sour cream, eggs, vanilla, melted/cooled butter and lemon juice.
3. Add liquid mixture to flour mixture and stir only until just blended. Stir in poppy seeds gently.
4. Divide between prepared muffin tins and bake at 400 for 18-20 minutes or until golden.
For icing:
1.Mix together 1 c sifted confectioners sugar with 2-3 T lemon juice or water. Drizzle over muffins when cooled.
